there was at least one cafe i went to in pittsburgh where they'd serve you loose leaf tea on a nice wooden tray with a timer (already counting down) and a receptacle for the used tea basket, and they'd advise you on when to take the basket out depending on your preferred brew strength. that's very nice but i think there's still an argument for "just brew it to what, in your estimation as a professional, is the correct brew strength and then give it to me" -- which is what we do for coffee
